  • 1 green onion (finely chopped)
  • 2.5 tbsp regular soy sauce
  • 0.5 tbsp sesame oil
  • 4 large eggs (beaten)
  • 2 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large pan or wok over high heat.
  2. Pour in the beaten eggs and stir-fry quickly until they begin to set but remain moist.
  3. Add the cold, day-old jasmine rice, breaking apart any clumps as you mix.
  4. Push the mixture to one side of the pan and add chopped green onions to the empty space.
  5. Mix everything thoroughly before drizzling soy sauce and sesame oil around the edges of the pan.
  6. Toss until all ingredients are evenly coated and serve hot.
