  • 3 boneless, skinless chicken breasts
  • 23 medium zucchinis
  • 23 medium yellow squashes
  • 12 oz white button mushrooms
  • 1/3 cup olive oil
  • 1/41/3 cup soy sauce
  • 3 tbsp minced garlic
  • Salt & pepper (to taste)

Instructions

  1. 1. Dice chicken into chunks and cut zucchini and yellow squash into quarters.
  2. 2. In a large mixing bowl, combine chicken, vegetables, olive oil (reserve 2 tbsp), soy sauce, minced garlic, salt, pepper, and other seasonings. Mix well.
  3. 3. Preheat air fryer to 375°F (190°C). Transfer mixture to the air fryer basket in an even layer and drizzle with reserved olive oil.
  4. 4. Cook for about 15 minutes or until chicken is thoroughly cooked and vegetables are tender.
  5. 5. Serve hot with steamed rice and yum yum sauce.
