  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 head of garlic (top cut off)
  • Fresh basil and lemon for garnish
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chilli flakes
  • 1 tbsp honey
  • 1 lemon, quartered

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the baking potatoes; par-boil in salted water for 6-8 minutes.
  3. Drain and allow to steam dry for 2-3 minutes.
  4. Toss par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper before placing them in a baking dish.
  5. Roast for 30-40 minutes until golden brown.
  6. Add the block of feta in the center; roast for an additional 15 minutes.
  7. Stir in mashed roasted garlic and chopped fresh basil before drizzling with honey.
