  • 1/3 cup flour
  • 1 large egg
  • 3/4 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • Cooking spray or oil
  • 1/2 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon salt
  • Ground black pepper (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with oil or cooking spray.
  2. In a shallow dish, mix flour, garlic powder, and salt. In another dish, beat the egg. In a third dish, combine breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper.
  3. Coat each zucchini stick first in the flour mixture, then dip it into the egg wash before rolling it in the breadcrumb mixture.
  4. Arrange the coated zucchini sticks on the prepared baking sheet and bake for about 20 minutes or until golden brown and crispy. Turn halfway through cooking for even crispiness.
