  • 2 beaten eggs
  • 1 cup panko bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 cups sharp white cheddar cheese
  • 4 tablespoons butter (for brushing)

  • zucchini relish
  • Worcestershire sauce
  • smoked paprika

Instructions

  1. Grate zucchini using both large and fine holes of a box grater; sprinkle with salt and let sit in a colander for 30 minutes.
  2. Preheat oven to 425°F (220°C).
  3. In a mixing bowl, combine beaten eggs, garlic, scallions, panko, Parmesan, lemon zest, and cheddar.
  4. Squeeze excess moisture from the zucchini; add to the mixture and combine well.
  5. Line a baking sheet with parchment paper; scoop out fritter mixture onto the sheet and flatten slightly.
  6. Brush tops with melted butter; bake for 12 minutes, flip fritters, then bake for another 12-15 minutes until golden brown.
  7. Mix dipping sauce ingredients in a bowl; refrigerate until serving.
