  • 2 tablespoons olive oil
  • 4 yellow onions, thinly sliced
  • 2 pounds Yukon Gold potatoes
  • 4 tablespoons salted butter (or non-dairy alternative)
  • 3/4 cup half & half (or full-fat coconut milk)
  • 1 teaspoon kosher salt
  • 1 cup grated Parmesan cheese
  • Fresh herbs: chives, thyme, and sage

Instructions

  1. Prepare the onions by peeling and slicing them thinly.
  2. In a skillet over medium heat, add olive oil and caramelize onions for about 40-50 minutes until deeply browned.
  3. While the onions cook, wash and chop the Yukon Gold potatoes into small pieces.
  4. Boil the chopped potatoes in a large pot of water for about 20 minutes or until fork-tender.
  5. Drain the cooked potatoes and mash them until smooth using a potato masher.
  6. Incorporate salted butter, kosher salt, and half & half (or coconut milk) into the mashed potatoes until creamy.
  7. Mix in half of the caramelized onions along with grated Parmesan cheese.
  8. Serve warm, topped with remaining caramelized onions and fresh herbs.
