  • 1 ½ pounds sweet potatoes
  • 4 tablespoons olive oil
  • 1 ½ cups green and red bell peppers
  • 14.5 ounces black beans
  • ½ cup frozen yellow corn
  • 3 tablespoons honey
  • 3 tablespoons lime juice
  • Corn or flour tortillas

Instructions

  1. Preheat your oven to 425°F and grease a baking sheet.
  2. In a small bowl, mix spices: cumin, paprika, garlic powder, onion powder, coriander, salt, and pepper.
  3. In a large bowl, coat sweet potato cubes with 3 tablespoons of olive oil and sprinkle with spice mix.
  4. Spread sweet potatoes on the baking sheet and roast for about 20 minutes.
  5. While roasting, add bell peppers to the same bowl with remaining olive oil; season with salt and pepper.
  6. After 20 minutes, add bell peppers to the baking sheet, stir well, and roast for another 20 minutes.
  7. Prepare the honey-lime sauce by mixing honey, lime juice, and chopped cilantro in a small bowl.
  8. Once roasted, add black beans and corn to the vegetables on the pan; drizzle with sauce and stir to combine.
  9. Return to the oven for an additional 10-15 minutes until slightly browned.
  10. Serve in tortillas or over salad greens topped with desired extras.
