  • 12 oz penne or rotini pasta
  • 2 chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente; drain and set aside.
  3. In a large skillet over medium heat, heat olive oil and sauté cubed chicken seasoned with Cajun seasoning until browned (about 5–7 minutes). Remove and set aside.
  4. In the same skillet, sauté onion, red bell pepper, and garlic for 3–4 minutes until softened.
  5. Stir in softened cream cheese until melted; add heavy cream and chicken broth for a smooth sauce.
  6. Mix in cheddar cheese, Parmesan cheese, paprika, salt, and pepper until creamy.
  7. Combine cooked chicken and pasta into the sauce until well mixed.
  8. Transfer to a greased baking dish (9×13 inch) and bake for 20–25 minutes until golden and bubbly.
  9. Garnish with chopped parsley if desired and serve hot.
