  • 12 oz (340g) pasta (spaghetti, fettuccine, or penne)
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon sugar (optional)
  • 1/4 cup olive oil for chili oil
  • 1 tablespoon chili flakes
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium-low heat, combine olive oil and butter. Add sliced onions and a pinch of salt. Stir occasionally and cook for 25-30 minutes until golden brown.
  2. Meanwhile, bring salted water to a boil in a pot and cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  3. In a small saucepan, combine additional olive oil, chili flakes, minced garlic, and salt over low heat for about 5 minutes.
  4. Once onions are caramelized, add drained pasta to the skillet along with reserved pasta water and chili oil. Toss gently to combine.
  5. Serve hot, garnished with fresh parsley and additional chili oil if desired.
