  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup cherry juice
  • 1/4 cup granulated sugar
  • 2 tablespoons cherry preserves
  • 1 teaspoon vanilla extract
  • 1 cup fresh cherries, pitted and chopped
  • 1 package ladyfingers
  • 1/4 cup cocoa powder
  • 1/4 cup dark chocolate, shaved or grated

Instructions

  1. In a large mixing bowl, beat mascarpone cheese and heavy cream until fluffy (2-3 minutes).
  2. Mix in cherry juice and vanilla extract until combined.
  3. In a small bowl, blend granulated sugar and cherry preserves; add to the mascarpone mixture and beat for an additional minute.
  4. Gently fold in chopped fresh cherries.
  5. Quickly dip ladyfingers in a shallow dish filled with cherry juice and arrange half in a 9×13 inch baking dish.
  6. Spread half of the mascarpone mixture over the ladyfingers, layer another set of dipped ladyfingers, then top with remaining mascarpone mixture.
  7. Cover and refrigerate for at least 4 hours or overnight before serving. Dust with cocoa powder and sprinkle chocolate shavings just before serving.
