  • ½ teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil for sautéing vegetables
  • 1 large onion, sliced thinly
  • 3 bell peppers, sliced thinly (assorted colors)
  • 1.5 cups uncooked long-grain white rice
  • 3 cups chicken broth
  • 1 tablespoon butter or olive oil (optional)
  • ½ teaspoon salt (if using water)
  • Optional toppings: sour cream or Greek yogurt, guacamole or sliced avocado, salsa, shredded cheese, fresh cilantro, lime wedges, pickled jalapeños

Instructions

  1. Marinate chicken strips in olive oil, lime juice, fajita seasoning, smoked paprika, cumin, salt, and pepper for at least 15 minutes.
  2. Cook rice in chicken broth according to package instructions.
  3. Sauté sliced onions and bell peppers in olive oil until tender-crisp.
  4. Cook marinated chicken in the same skillet until fully cooked.
  5. Assemble bowls with cooked rice topped with sautéed vegetables and chicken; add desired toppings.
