  • 6 boneless skinless chicken thighs or breasts (cut into bite-sized pieces)
  • 4 bell peppers (sliced)
  • 1 small onion (sliced)
  • 1 package fajita seasoning mix
  • 1 cup sour cream
  • 4 ounces cream cheese (softened)
  • 2 cups cheddar cheese (grated)

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a large skillet, heat olive oil over medium heat. Sauté chicken until cooked through; remove from the skillet.
  3. In the same skillet, sauté sliced onion and bell peppers until tender.
  4. Return chicken to the skillet and stir in fajita seasoning, sour cream, and softened cream cheese until well combined.
  5. Transfer mixture to a baking dish, top with grated cheddar cheese, and bake for 10-15 minutes or until cheese is melted.
