  • 1 lb. boneless skinless chicken breast
  • 1 lb. Yukon gold potatoes
  • 5 cups chicken broth
  • 1 cup half-and-half
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 12 teaspoons olive oil
  • 2 tablespoons butter (not needed if drippings are used)
  • salt
  • pepper
  • 1 teaspoon hot sauce
  • ¼ cup flour
  • 1 ½ cups cheddar cheese (shredded)
  • Green onions (to garnish)
  • 1 teaspoon dried parsley
  • ½ teaspoon EACH: dried rosemary, oregano, mustard powder
  • ¼ teaspoon pepper
  • 1 pinch red pepper flakes

Instructions

  1. Cook the turkey bacon in a pot over low heat until crispy. Set aside, reserving drippings.
  2. Sear seasoned chicken in the same pot until golden brown.
  3. Add diced onion, carrots, and celery to the pot; cook until softened, then stir in minced garlic and seasonings.
  4. Sprinkle flour over vegetables and cook briefly before gradually adding chicken broth and half-and-half.
  5. Add cubed potatoes and simmer until tender.
  6. Stir in shredded cheddar cheese and half of the turkey bacon before serving garnished with green onions.
