  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar

  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. Whisk together flour, baking powder, and salt in a mixing bowl.
  3. In another bowl, beat softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla and coconut extracts.
  4. Gradually alternate adding the dry ingredients and coconut milk into the creamed mixture until fully combined.
  5. Pour batter into prepared pans and bake for 25–30 minutes until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks.
  7. Prepare frosting by beating cream cheese and powdered sugar together, then folding in whipped heavy cream.
  8. Once cooled, frost the first layer of cake before adding the second layer on top; frost the entire cake and press shredded coconut onto the sides and top.
