  • 2 (3.4 oz) boxes of instant coconut cream pudding mix
  • 3 cups half-and-half
  • 8 oz Cool Whip for topping
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. Combine graham cracker crumbs, sugar, and melted butter. Press firmly into a 9×13 inch baking dish to form the crust.
  2. Beat cream cheese, powdered sugar, and coconut extract until smooth. Fold in Cool Whip and spread over the crust.
  3. Whisk pudding mix with half-and-half until thickened. Pour over the cream cheese layer.
  4. Spread remaining Cool Whip on top and sprinkle with toasted coconut. Chill for at least 6 hours before serving.
