  • 300g rotini pasta (or any short pasta)
  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt & pepper

Instructions

  1. Cook the rotini according to package directions. Add broccoli florets in the last 3 minutes of cooking. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add diced chicken and cook until golden brown.
  3. Stir in minced garlic and sauté for about 1 minute until fragrant. Add heavy cream, chicken broth, Parmesan cheese, salt, and pepper; let simmer until slightly thickened.
  4. Combine the drained pasta and broccoli with the sauce in the skillet, tossing gently to coat.
  5. Serve on plates garnished with extra Parmesan cheese and fresh parsley if desired.
