  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or coconut milk
  • 1 cup shredded cheddar cheese
  • Sliced green onions
  • Extra shredded cheese
  • Crushed tortilla chips

Instructions

  1. Brown the ground beef in a large pot over medium heat until fully cooked. Drain excess fat if necessary.
  2. Add diced onion and minced garlic; sauté until onions are translucent (about 3-4 minutes).
  3. Stir in beef broth, canned tomatoes (with juice), corn, black beans, and diced potatoes.
  4. Season with smoked paprika, chili powder, cumin, salt, and pepper; bring to a simmer.
  5. After about 15 minutes of simmering, lower the heat and mix in heavy cream or coconut milk along with shredded cheddar cheese until melted.
  6. Serve hot topped with sliced green onions, extra cheese, and crushed tortilla chips.
