  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 lb mushrooms, quartered
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • Bouquet garni (thyme, bay leaves, parsley)
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping vegetables and cutting beef into bite-sized pieces.
  2. In a large pot over medium heat, heat olive oil. Season beef with salt and pepper.
  3. Brown the beef in batches until well-seared; remove from pot.
  4. Sauté onion, carrots, and garlic until onion is translucent.
  5. Sprinkle flour over vegetables and stir to coat; scrape up any bits stuck to the pot.
  6. Return the beef to the pot along with juices, add tomato paste and bouquet garni; bring to a boil.
  7. Lower heat to simmer gently for about 2 hours.
  8. About 30 minutes before serving, sauté mushrooms separately until golden brown; add to stew.
