  • 2 large boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 2 cups broccoli florets
  • 3 cups fresh spinach leaves
  • 2 tbsp olive oil
  • 1/4 cup chicken broth or water
  • Salt and pepper to taste
  • Optional: 1/2 tsp red pepper flakes, 1 tbsp lemon juice, 1/4 cup grated Parmesan cheese

Instructions

  1. Chop the chicken and mince the garlic. Rinse the broccoli and spinach.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden (6-8 minutes). Remove and set aside.
  3. In the same skillet, add another tbsp of olive oil and sauté broccoli for 3-4 minutes until slightly tender.
  4. Add minced garlic and spinach; cook until spinach wilts (about 2 minutes).
  5. Return chicken to skillet, add broth or water, simmer for 2-3 minutes to combine flavors.
  6. Finish with lemon juice and Parmesan cheese if desired. Adjust seasoning before serving.
