  • 2 large boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook rotini in salted boiling water until al dente (about 10 minutes). Drain and set aside.
  2. Season chicken strips with Cajun seasoning, smoked paprika, salt, and pepper; coat with Parmesan.
  3. In a skillet, heat olive oil and 2 tbsp butter over medium-high heat. Sear chicken for about 5-7 minutes until cooked through.
  4. Add remaining butter and half the garlic; infuse flavor into the chicken before setting aside.
  5. Melt last tbsp of butter in the same pan; sauté remaining garlic until fragrant.
  6. Stir in heavy cream and broth; bring to a simmer.
  7. Whisk in cream cheese until smooth; add mozzarella, cheddar, and Parmesan until thickened.
  8. Season with Italian seasoning, basil, red pepper flakes if desired, adjusting salt and pepper to taste.
  9. Toss cooked rotini in the sauce until well-coated; let sit on low heat to soak up flavors.
  10. Serve topped with garlic Parmesan chicken and garnish with parsley.
