  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder (adjust to taste)
  • 1 teaspoon salt
  • 2 tablespoons butter or ghee
  • 1 tablespoon oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tablespoons tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon sugar (optional, balances acidity)
  • Salt and pepper to taste
  • ¼ cup chopped cilantro (for garnish)
  • 1 tablespoon lemon juice (for finishing)

Instructions

  1. In a mixing bowl, combine Greek yogurt, lemon juice, ginger-garlic paste, and spices. Add chicken pieces and coat evenly. Cover and refrigerate for at least 30 minutes.
  2. Heat a cast iron skillet over medium-high heat with oil and butter. Sear marinated chicken until golden brown but not fully cooked. Remove from pan.
  3. In the same pan, sauté onions until translucent. Add garlic and ginger; cook until fragrant. Stir in spices and tomato paste; cook for about 5-7 minutes.
  4. Add crushed tomatoes and return chicken to the pan. Pour in cream or coconut milk; simmer on low for 15-20 minutes until cooked through.
  5. Adjust seasoning as needed and finish with lemon juice and cilantro.
