  • 1 cup cooked white rice
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes
  • 23 lettuce leaves
  • 1 red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • Fresh herbs (parsley, dill, or cilantro), chopped
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Salt & pepper, to taste

Instructions

  1. Season the chicken breast with salt, pepper, and olive oil. Grill or pan-sear for 5–6 minutes on each side until fully cooked. Slice into strips.
  2. Cook rice according to package instructions and let cool slightly.
  3. In a mixing bowl, combine Greek yogurt with herbs, lemon juice, salt, pepper, and optional chili flakes. Mix well.
  4. Prepare vegetables by slicing cucumber, halving cherry tomatoes, and thinly slicing red onion. Tear lettuce into bite-sized pieces.
