  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 2 large sweet potatoes (about 1.5 lbs), diced
  • 1 cup cooked quinoa or brown rice (optional base)
  • Avocado (optional topping)
  • Toasted pumpkin seeds (optional topping)

Instructions

  1. Marinate the chicken by mixing olive oil, lemon juice, Dijon mustard, garlic, oregano, smoked paprika, salt, and pepper in a bowl. Add chicken and coat well; refrigerate for at least 30 minutes.
  2. Preheat the oven to 425°F (220°C). Toss diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and cayenne (if using). Spread on a baking sheet.
  3. Roast sweet potatoes for 25-30 minutes until golden brown and tender.
  4. Heat a grill or grill pan over medium-high heat. Grill marinated chicken for about 6-7 minutes per side until cooked through (165°F internal temperature). Let rest before slicing.
  5. Assemble your bowl starting with quinoa or rice (if using), topped with roasted sweet potatoes and grilled chicken slices. Add avocado and drizzle with tahini sauce if desired.
