  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 can (28 ounces) diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice zucchini into rounds and salt them to draw out excess moisture.
  3. In a skillet over medium-high heat, cook onions until softened. Add garlic and ground beef; cook until browned.
  4. Stir in tomatoes and seasonings; remove from heat.
  5. In a baking dish, layer half of the beef mixture, half of the zucchini slices, and half of the cheese. Repeat layers.
  6. Bake for 20-25 minutes until the cheese is melted and slightly golden.
