  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 can (20 oz) crushed pineapple (with juice)
  • 1 cup chopped pecans (optional)
  • 1 cup sweetened shredded coconut (optional)
  • 1 package (8 oz) cream cheese, softened
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp pineapple juice (reserved from the can)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a large mixing bowl, combine flour, sugar, baking soda, and salt. Add eggs, vanilla extract, and crushed pineapple with juice; mix until well combined.
  3. Fold in optional chopped pecans and shredded coconut if desired. Divide the batter between the prepared pans.
  4. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes before transferring to wire racks to cool completely.
  5. For the frosting, beat softened cream cheese and butter together until smooth. Gradually add powdered sugar followed by vanilla extract and reserved pineapple juice until fluffy.
  6. Once cakes are completely cool, frost the top of one layer, add optional garnishes, then place the second layer on top and frost the entire cake.
