  • 1 tbsp heavy cream
  • 2.5 oz beef rinds (approx. 1 cup)
  • 1/2 cup grated Parmesan

Instructions

  1. Preheat your oven to 400F (200C).
  2. Cut zucchini into matchsticks, leaving some peel for texture.
  3. In a mixing bowl, whisk together eggs and heavy cream.
  4. In a food processor, pulse beef rinds until breadcrumb-like; then mix with grated Parmesan.
  5. Dip zucchini sticks in the egg mixture, then coat with the beef rind mixture.
