  • 12 oz orzo pasta
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp extra-virgin olive oil
  • Juice and zest of 1 lemon
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, chopped
  • Fresh parsley and dill

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss shrimp with olive oil, salt, pepper, oregano, smoked paprika, and lemon zest. Spread on the baking sheet.
  3. Roast shrimp for 8–10 minutes until opaque.
  4. Cook orzo in salted boiling water according to package instructions; drain well.
  5. In the hot pot, mix orzo with olive oil, lemon juice, garlic, and optional red pepper flakes.
  6. Fold in cherry tomatoes, spinach, parsley, and dill until spinach wilts.
