  • 4 boneless skinless chicken breasts
  • 3 cloves garlic
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • 2 tablespoons olive oil
  • Salt and pepper (for seasoning)

Instructions

  1. Pound chicken breasts to an even thickness and season with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat; cook chicken for 3-4 minutes per side until golden brown. Remove from pan.
  3. In the same pan, sauté minced garlic for 1 minute; add chicken broth, lemon juice, and zest. Bring to a boil.
  4. Reduce heat to low, stir in heavy cream; simmer for about 5 minutes. Add Parmesan cheese until melted.
  5. Stir in fresh spinach until wilted; return chicken to pan and spoon sauce over it. Cook for another 2 minutes.
  6. Serve garnished with sliced lemon and extra Parmesan cheese.
