  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme
  • 1 tablespoon olive oil (for drizzling)
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the yeast mixture: In a bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a separate bowl, mix together flour and salt.
  3. Combine the yeast mixture with the flour and salt; add olive oil and stir until a dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place dough in an oiled bowl, cover, and let rise in a warm place for 1 to 1.5 hours until doubled in size.
  6. While the dough rises, mix ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a bowl.
  7. Preheat your oven to 475°F (245°C) with a pizza stone or baking sheet inside.
  8. Roll out the dough into a thin circle on a floured surface.
  9. Transfer to parchment paper; spread cheese mixture over the dough and sprinkle with thyme.
  10. Bake pizza for 10-12 minutes until crust is golden and cheese bubbles lightly.
  11. Drizzle with olive oil and honey before serving.
