  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced

  • 1 tablespoon olive oil
  • smoked paprika
  • black pepper
  • salt

Instructions

  1. In a large skillet over medium heat, heat olive oil and brown the sausage slices for about 4–5 minutes. Remove and set aside.
  2. In the same skillet, sauté diced onion and bell pepper for 3–4 minutes. Add minced garlic and cook for another 30 seconds.
  3. Stir in smoked paprika and black pepper, then add uncooked rice and toast it for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; mix well before adding back the browned sausage.
  5. Bring to a boil, cover with a lid, reduce heat to low, and simmer for 20–22 minutes until the rice is tender.
  6. Let rest for 5 minutes off heat, fluff with a fork, and serve garnished with fresh parsley.
