Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin tin by greasing it or lining it with paper liners.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg until well combined.
  3. In another bowl, mix the eggs, pumpkin puree, white and brown sugars, and vegetable oil until just combined.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just blended; do not overmix.
  5. Fold in the chocolate chips gently until evenly distributed.
  6. Spoon the batter into the prepared muffin tin and bake for about 16 minutes or until a toothpick inserted comes out clean. Allow cooling before serving.
