  • 1 lb jumbo shrimp (peeled and deveined)
  • 4 egg whites
  • 2/3 cup cornstarch
  • 1/4 cup Japanese mayo
  • 3 tbsp sweetened condensed milk
  • 2 tbsp honey
  • 1 tbsp lemon juice (freshly squeezed)
  • 1/2 cup walnuts (halves)
  • 3 tbsp white granulated sugar
  • 1 tbsp water (cold)
  • 1 green onion (finely chopped)
  • 1 cup vegetable oil (for frying)

Instructions

  1. In a small bowl, mix all sauce ingredients: mayo, condensed milk, honey, and lemon juice.
  2. For candied walnuts, heat sugar and cold water in a non-stick pan until syrup thickens. Add walnuts to coat evenly.
  3. Toss shrimp in salt and pepper. Whisk egg whites until foamy; mix in cornstarch to create batter.
  4. Coat shrimp in batter and fry in hot oil (350°F) for 2-3 minutes until golden brown.
  5. Drain excess oil from shrimp, then combine with candied walnuts and sauce.
  6. Serve warm, garnished with chopped green onions.
