Ingredients

Scale
  • 8 ounces fettuccine or linguine
  • 1 pound fresh salmon fillet
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cups fresh spinach
  • Lemon zest and juice
  • Salt and pepper

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente (about 8–10 minutes). Drain, reserving about 1 cup of pasta water.
  2. Season the salmon with salt, pepper, and lemon juice. Heat olive oil in a skillet over medium heat; cook the salmon for 4–5 minutes on each side until cooked through. Flake into pieces once cooled.
  3. In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add chopped spinach and cook until wilted (2–3 minutes). Stir in heavy cream and gradually add Parmesan until melted.
  4. Mix in lemon zest and juice; season with salt and pepper. Add drained pasta and flaked salmon to the sauce, tossing gently to combine.
  5. Adjust consistency with reserved pasta water if needed. Serve garnished with fresh parsley.
