  • 1 salmon fillet (about 150-180g)
  • 2 medium potatoes, peeled & diced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 tsp olive oil or butter
  • Salt & pepper, to taste
  • 1 tbsp butter
  • 2 tbsp milk

Instructions

  1. Season the salmon fillet with salt and pepper. Heat olive oil or butter in a frying pan over medium heat. Cook the salmon for 3-4 minutes on each side until cooked through.
  2. In a pot of salted water, boil diced potatoes for 12-15 minutes until fork-tender. Drain and mash with butter and milk until smooth, seasoning with salt to taste.
  3. Steam broccoli and carrots using a steamer basket over boiling water. Steam carrots for about 5-6 minutes and broccoli for 4-5 minutes until tender yet vibrant.
  4. Plate the salmon alongside the mashed potatoes and steamed vegetables. Serve hot.
