  • 400 g ground lamb (or beef)
  • 1 tsp onion, finely chopped
  • 1 tsp white pepper
  • 0.5 tsp black pepper
  • 0.5 tsp ground mace
  • 0.25 tsp ground nutmeg
  • 250 g all-purpose flour
  • 100 g butter (or lard)
  • 100 ml boiling water
  • 1 egg, beaten for brushing

Instructions

  1. To make the pastry, heat butter (or lard) and boiling water in a saucepan until just boiling. Pour over flour and half the salt in a mixing bowl and stir to combine. Let cool slightly before kneading until smooth.
  2. In another bowl, mix ground lamb (or beef), onion, spices, and remaining salt until well combined.
  3. Roll out pastry to about 1/8-inch thick; cut circles for bases and tops.
  4. Line pie rings or muffin tins with larger circles to create shells and fill with meat mixture.
  5. Moisten edges of pastry before sealing with tops; pinch edges securely.
  6. Brush each pie with beaten egg and bake at 180°C (350°F) for 30–35 minutes or until golden brown.
