  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Wash and dry cucumbers. Chop in half and smash with the flat side of a knife. Cut into 1-inch pieces.
  2. Peel and chop avocado; add to the bowl with cucumbers.
  3. Add feta, pistachios, dill, and chives to the bowl.
  4. In a separate jar or bowl, combine dressing ingredients (olive oil, lemon juice, Dijon mustard, honey, minced garlic) and whisk until emulsified.
  5. Pour dressing over salad mixture and toss gently to combine. Serve immediately.
