  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 4 slices cooked Turkey Bacon
  • 1 ripe avocado, sliced
  • 2 slices pepper jack or cheddar cheese
  • ¼ cup pickled jalapeños
  • 2 brioche buns, toasted
  • ¼ cup mayonnaise
  • 1 tbsp adobo sauce
  • ½ tsp lime juice

Instructions

  1. Pound chicken breasts to even thickness. Coat with olive oil and season with smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
  2. Preheat grill to medium-high. Grill seasoned chicken for 4–5 minutes on each side until cooked through (internal temperature of 165°F). Add cheese during the last minute to melt.
  3. In a bowl, mix mayonnaise, adobo sauce, and lime juice for chipotle mayo.
  4. Toast brioche buns until golden brown.
  5. Assemble by spreading chipotle mayo on both bun sides. Layer with avocado, grilled chicken with melted cheese, crispy Turkey Bacon, and pickled jalapeños.
