  • 2 cups fresh spinach (sautéed and chopped)
  • 8 oz low-moisture mozzarella (cubed)
  • 3 cloves garlic (minced)
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • Olive oil (for searing)

Instructions

  1. In a skillet, heat olive oil and sauté minced garlic until fragrant. Add spinach, cooking until just wilted. Cool slightly, squeeze out excess moisture, and chop finely.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, salt, pepper, egg, and chopped spinach. Gently mix until just combined.
  3. Take a portion of the mixture, flatten it in your palm, place a cube of mozzarella in the center, and seal the meat around it to form a ball.
  4. Heat olive oil in a skillet over medium heat and sear meatballs for about 2–3 minutes on each side until golden brown.
  5. Finish cooking by either covering the skillet on low heat for an additional 5–7 minutes or transferring to an oven preheated to 375°F (190°C) for 10–12 minutes.
