  • 2 cups uncooked rice
  • 3 large chicken breasts
  • 2 tbsp olive oil
  • 2 small heads broccoli (chopped)
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic (minced)
  • 2 tbsp sriracha
  • sesame seeds for topping

Instructions

  1. Cook rice according to package instructions and set aside.
  2. Chop broccoli into florets and steam or sauté until tender.
  3. Slice chicken breasts into strips, season with salt, pepper, paprika, chili powder, onion powder, and oregano.
  4. Heat olive oil in a skillet over medium heat; cook seasoned chicken until golden brown and fully cooked.
  5. Add chopped broccoli to the skillet and sauté until bright green.
  6. In a mixing bowl, whisk together soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, ginger, and arrowroot slurry. Pour over the chicken and simmer until thickened.
  7. Serve by layering rice in bowls topped with sticky chicken and broccoli; drizzle spicy mayo on top if desired.
