  • 2 medium zucchini
  • 1 ½ cups pre-cooked chicken (cubed or shredded)
  • ¾ cup heavy cream
  • ½ cup grated parmesan cheese
  • ½ medium onion (diced)
  • 3 tablespoons olive oil
  • Garlic powder, oregano, salt, and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a baking dish.
  2. Halve the zucchini lengthwise and scoop out the flesh, reserving half.
  3. Bake zucchini halves cut-side up for about 15 minutes until slightly softened.
  4. Sauté diced onion in olive oil until softened; add tomatoes, chicken, reserved zucchini flesh, herbs, and garlic powder.
  5. Stir in heavy cream and simmer for 2–3 minutes before adding parmesan cheese.
  6. Fill the baked zucchinis with the creamy mixture and top with additional cheese.
  7. Bake again for another 10 minutes until bubbly.
