  • 2 cups cooked chicken, shredded
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp honey
  • Olive oil
  • Salt
  • Black pepper
  • Dried herbs

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Halve the butternut squash, brush with olive oil, drizzle with honey, and season with cinnamon, salt, and pepper. Roast cut side down for 30–40 minutes until tender.
  3. In a skillet, sauté onion in olive oil until translucent. Add garlic and cook until fragrant.
  4. Stir in shredded chicken and broth; mix in Parmesan cheese and optional cranberries/walnuts. Season to taste.
  5. Scoop out some flesh from the squash and mix it into the filling. Stuff each half generously.
  6. Return stuffed squash to the oven and bake for an additional 15 minutes until golden.
