  • 2 Sweet Potatoes, quartered (1 pound each)
  • 1 Large Tart Apple, peeled and cored
  • 2 Tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 Stalks Celery, chopped
  • 1 Large Carrot, chopped
  • 1 Bay Leaf
  • 5 Cups Chicken Broth
  • 1 Cup Cream (or coconut milk for a dairy-free option)
  • Zest and juice of 1 Lemon
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange quartered sweet potatoes and apple on a greased baking sheet.
  3. Roast in the oven for about 40 minutes until tender.
  4. Allow to cool slightly, then peel sweet potatoes.
  5. In a soup pot over medium heat, warm olive oil.
  6. Sauté onion, celery, bay leaf, and carrot until tender.
  7. Remove bay leaf and add chicken broth along with roasted sweet potatoes and apple.
  8. Blend the mixture using an immersion blender until smooth.
