  • Vegetable or canola oil (for frying)
  • 3 cups shredded cooked chicken
  • 6 ounces cream cheese (softened)
  • 1½ cups baby spinach (chopped)
  • 1½ cups shredded Colby Jack cheese
  • ½ cup salsa
  • ⅓ cup sour cream
  • Salt and pepper to taste
  • 12 (6-inch) corn or flour tortillas

Instructions

  1. Heat oil in a saucepan over medium heat to 350°F.
  2. In a large bowl, combine shredded chicken, cream cheese, spinach, Colby Jack cheese, salsa, sour cream, salt, and pepper.
  3. Place a few tablespoons of the filling in the center of each tortilla. Roll tightly and seal.
  4. Fry each taquito in hot oil for about 2–3 minutes per side until golden brown.
  5. Drain on paper towels and serve warm with your choice of toppings.
