  • 1 salmon fillet (~5 oz)
  • 2 tbsp teriyaki sauce (store-bought or homemade)
  • 1 cup cooked jasmine rice
  • avocado, sliced
  • 1 small cucumber, thinly sliced
  • 1 tsp rice vinegar or lemon juice
  • Salt & pepper to taste
  • 1 tsp sesame oil (optional)
  • lemon or orange wedge

Instructions

  1. Cook the Salmon: Pan-sear or bake the salmon at 400°F (200°C) for 10-12 minutes; brush with teriyaki sauce during the last 2 minutes.
  2. Prepare Cucumber Salad: In a mixing bowl, combine sliced cucumber, rice vinegar or lemon juice, salt, pepper, and sesame oil (if using). Chill in the refrigerator.
