  • 1 onion (diced)

  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)

  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat. Sauté diced onion for about 3 minutes until translucent.
  2. Add minced garlic, diced celery, and carrots, followed by chopped potatoes. Season with dried marjoram and nutmeg; sauté for another minute.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and let simmer for about 20 minutes until vegetables are tender.
  4. Blend half of the soup until smooth using an immersion blender or regular blender in batches.
  5. Return blended soup to the pot, stir in dairy-free cream, adjust seasoning, and let simmer for a few more minutes before serving.
