  • 2 Zucchini, grated
  • 1 Carrot, grated
  • 2 tablespoons Olive Oil
  • 1 Brown/Yellow Onion, diced
  • 2 Turkey Bacon Slices/Rashers, diced
  • 1/2 Red Capsicum/Bell Pepper, diced
  • 5 Eggs, lightly whisked
  • 1/4 cup Milk
  • 1 cup Self-Raising Flour
  • 1 1/4 cup Grated Cheddar Cheese
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 180C (350F) and line a square baking dish with baking paper.
  2. Grate zucchini and carrot into a colander; sprinkle with salt and let sit for 10 minutes to draw out moisture.
  3. In a frying pan over medium heat, sauté onion and turkey bacon in olive oil until golden brown; remove from heat.
  4. Squeeze excess moisture from zucchini and carrot; combine with capsicum, onion mixture, turkey bacon, cheese, and flour in a large bowl.
  5. Add whisked eggs, milk, remaining olive oil, salt, and pepper; mix well.
  6. Pour mixture into the prepared baking tray; smooth the top and sprinkle with reserved cheese. Bake for 35-40 minutes or until firm to touch. Cool before cutting into squares.
