  • 2 zucchini squash (sliced thin)
  • 45 tomatoes (sliced)
  • 11/2 cups shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 2 teaspoons garlic powder
  • 3/4 cup fine bread crumbs
  • 2 tablespoons butter (melted)

Instructions

  1. Preheat the oven to 375°F. Grease a 9×9 baking dish with nonstick cooking spray.
  2. In a mixing bowl, combine mozzarella, Parmesan, garlic powder, salt, pepper, basil, and oregano.
  3. In the baking dish, layer sliced zucchini followed by 1/4 of the cheese mixture and then sliced tomatoes. Repeat until all ingredients are used.
  4. Mix melted butter with bread crumbs and sprinkle evenly over the layered vegetables.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 20 minutes until golden brown.
